Francis Boulard & Fille
The grapes come from various plots in the Marne Valley and the Massif St. Thierry. The soils are rich in clay and limestone. The vines have an average age of 35 years. Only the "cuvée", the high-quality must from the first pressing, is used to make this champagne. Fermentation takes place spontaneously in used barriques. Malolactic fermentation is not prevented. There is no fining or filtering. Assemblage: 80% from one vintage with 20% reserve wines. After the second fermentation, the champagne matures on the yeast for 30 months. No dosage is used.
