The grapes undergo gentle fermentation in vats and are softly stirred twice daily. After a short maceration period, they are pressed and slowly fermented in stainless steel at temperatures below 20 degrees Celsius. The young wine matures on the fine lees until the end of March. From certified sustainable cultivation to vinification and bottling, the entire process mirrors the environmental consciousness of the leading Weingut Dürnberg, which sets standards in organic winemaking.
Aroma: Bright yellow-green. Tropical fruit notes underscored by delicate meadow herb accents, subtle hints of yellow apple and ripe pineapple. Juicy, with subtle fruit sweetness, a delicate arc of acidity, a touch of minerality in the finish, and promising aging potential.
Pairing recommendation: This wine pairs excellently with lobster soup, sautéed porcini mushrooms, steamed cod, roasted/grilled branzino (European sea bass) with fennel, roasted/grilled turbot, pan-fried char with apricot and leek confit, rabbit ragout, ragout of white meat and fish, pan-fried pheasant, lamb fillets with oyster mushrooms, braised wild boar shoulder with chestnuts.
