Blue poppy seeds are the most commonly cultivated poppy variety in the world. They got their name from the bluish color of their seeds. The capsule is closed and must be destroyed during harvesting to get to the seeds.

Blue poppy seeds have a thicker seed coat than gray poppy seeds. Due to this thicker seed coat and the tannins it contains, blue poppy seeds taste a little more intense but also more bitter. Blue poppy seeds are well suited to savory dishes. Poppy seed rolls or poppy seed rolls sprinkled with blue poppy seeds are very decorative in terms of color. Poppyseed oil from blue poppy seeds has a more intense flavor and is well suited to hearty salads, aspic, sheep's and goat's cheese.
