Francis Boulard & Fille
An exceptional champagne that can be found on the menus of many 3-star restaurants for good reason:
The grapes come from clay and limestone vineyards in the Marne Valley and the Massif de Saint-Thierry. Old vines, spontaneous fermentation in used barriques, no fining, no filtration, no dosage - but 30 months of maturation on the lees. The result is a champagne with depth, tension and absolute clarity.
