Francis Boulard & Fille
The grapes come from various plots in the Marne Valley and the Massif St. Thierry. The soils are rich in clay and limestone. The vines have an average age of 35 years. Fermentation takes place spontaneously in used barriques. Malolactic fermentation is not prevented. There is no fining or filtering. After the second fermentation, the champagne matures on the yeast for 30 months. No dosage is used.
