M. Chapoutier
The fact that Michel Chapoutier believes that great wines are primarily created in the vineyard and not in the cellar is evident not least in the Ermitage Le Pavillon. The winemaker consistently relies on low yields, does not use cultured yeasts in the cellar and even cultivates small parcels separately. On the steep slopes of the vineyards, Syrah vines that are over 90 years old take root and are harvested by hand for this special wine. You can taste the result.
