Codesa – hand-boned anchovies from Cantabria in extra virgin olive oil.
The Codesa company has been producing top-class anchovies since 1976 in Cantabria, located on the Bay of Biscay. In the fishing village of Laredo, a stronghold of European anchovy processing, the third generation produces these culinary treasures from anchovies (Engraulis encrasicolus) caught in spring.
