The Fukuju Brewery was founded in 1751 in the traditional sake village of Nada in the city of Kobe. Since the Edo era, Nada has been known for its high quality sake produced by skilled brewers. Nada sake was even shipped to Edo (Tokyo), more than 400 km away, and was always appreciated by the Shogun. On the north side of the mountains, which has rich soil and a perfect climate, the sought-after Yamada Nishiki sake rice is grown. Mount Rokko provides the perfect water with high mineral and low iron content. This combination of exceptional water and rice results in a clear and strong sake profile, the so-called Otokozake (men's sake). Another advantage is the cold north wind that blows down from Mount Rokko. It allows sake to be brewed slowly at a low temperature to improve the quality of the sake and achieve a full and smooth taste. Using the Rokko terroir - rice, water and climate - Fukuju has been producing its signature sake for over 260 years.
