Mate is a tree from the holly family whose leaves are used to make a drink of the same name, yerba mate. This drink is consumed as an infusion and is traditionally drunk in a calabash (gourd) with a filtering, metallic straw called a "bombilla". In South America, mate is so popular that in some countries like Argentina and Paraguay it has become a national symbol and a ritual of conviviality. The lemon is the symbol of perfection and beauty for Indians in Kashmir, their region of origin. This fruit offers a wide range of flavours from sweet to bitter or sour and is indispensable in winter.
