After skinning and first selection, the hazelnuts are roasted in special ovens; this step not only removes the hazelnut skin, but also naturally prolongs its shelf life by eliminating the low natural residual moisture. In addition, roasting is a fundamental step in highlighting unique flavours and aromas. After a further manual selection, the hazelnuts are immediately vacuum packed to preserve the flavours and distinctive taste.
