Bodegas Tradición
The team at Bodegas Tradición, founded in 1998, set itself the goal of reviving the old and traditional work processes of sherry production. For this reason, the sherries are lightly filtered before bottling, but not cold-filtered in order to preserve the natural aromas. Today, four types of sherry are stored in the bodega: Amontillado, Oloroso, Palo Cortado and Pedro Ximénez and Fino.

Palo Cortado is a very special and rare sherry. Originally vinified as Amontillado, it lost its pile layer due to natural circumstances and then continued to mature for a long time in an oxidative process in the style of Oloroso.
This special form combines the best characteristics of Amontillado and Oloroso: an elegant, fresh wine with a full, complex bouquet, which reminds of nuts or almonds with a fine sweetness yet dry. Only 2500 bottles are bottled annually.
